Yes: Extreme phobia or anxiety can set off diarrhea. Essentially, some of the same neuroreceptors and neurotransmitters are in the stomach as that in the brain (the "enteric nervous system"). So, during heightened stress/anxiety, an overwhelming presence of neural activity can excite the enteric nervous system into diarrhea (increased motility) just like increased brain activity can = anxiety.

Visceral reaction: Yes you can scare yourself enough that you can bring on diarrhea. Question is why? Why are you so paranoid over getting food poisoning? Is it based in reality...You had a bad past experience; conversely, you have no valid reason for your food poisoning. If that is the case, best to seek treatment from a psychologist well versed in paranoid disorders. Good luck.
