Early habits: Most of the times if the kids have been used to eating their fruit& veges before entering school, they'll stick to them if you don't give in when they try to get out of it.For the ones, who have been difficult early on toeat them, try making a connection between good things they achieve & healthy food choices. My patients, usually start eating them once they come in 4 well child visits!

Be Creative....: Lecturing doesn't help. Making food look fun and appealing can entice them. There are a couple cookbooks for that purpose...Finding something that piques their interest- like fruits and veggies make you stronger, smarter, etc work for some. For others simply requiring they eat 2-3 bites can help. Before age 10 it can take 45 times seeing a food before they will try it. Patience and persistence...

....more: Bribing doesn't really help either.....Asking kids what they like about foods can be revealing. Some like certain colors..So offer them red or green or purple foods like their favorite toy, etc. Plain old parenting still works..."eat two bites before you can have dessert." for example....Nothing too rigid but maintaining boundaries and being persistent as well.
