I keep waking up in the middle of the night with extreme hunger, could this be hypoglycemia? i eat 3 times a day plus snacks too.

Could be: But hypoglycemia occurs pre or post meals hence should occur both while awake unless you eat frequently while awake. Have laboratory work up for hypoglycemia with your doctor.
