I have been to a few doctors, none have found a reason why this is happening, but the skin on my tongue is peeling off. it will grow back and peel off?

Hmmm: If you have bald spots on your tongue ; the size ; location vary from time to time it might be something known as geographic tongue. If that is the case, it surprises me that the few doctors whom you saw "don't know what it is?" if you actually see the skin "peeling off"; it might well be something else. See an oral surgeon or oral pathologist for a definitive diagnosis. It might require a biopsy.
