Could a the sickle cell trait skip generations?

No: Sickle cell trait is when a person has one mutated copy of the beta-hemoglobin gene and one normal copy. You always inherit the mutated hemoglobin from one of your parents. Thus, one parent always has at least sickle cell trait if the child has sickle cell trait. Therefore trait does not skip a generation.
