Many reasons: Dorm food is mass produced and is made from food supplied by commercial vendors. The food chain is subject to adulteration and spoilage. Dorm food managers tread the line between palatability and cost saving. This is not always the most delicious, or healthy option. Subway has to sell to the public in the face of competition so taste is a serious goal. Try to eat fresh, identifiable foods.
