Art therapy is: The use of art as a means to express emotions and emotional issues. I' not sure what you would like to know about psychology, the science of the psyche.

Art Therapy: I am a Creative Arts Therapist and a Psychologist so I do know something about this topic :-). Since the beginning of civilization humans have expressed their feelings, hopes, dreams, sorrows, and awareness of something bigger then themselves through their art. Today we use all the arts to help people express their deepest feelings and to help them to grow and integrate as people. Wonderful work!
