Gluten sensitivity: ~0.4% of people have Ciliac Dz, a reaction to gluten which causes severe inflammation of the bowel to the extent that without intervention they may require bowel surgery. A much larger percentage of the population has some sensitivity to gluten and feel much better if they avoid it. In my practice for instance, I put all my IBS diarrhea predominant patients on a gluten/HFCS free trial.
