See below: A hygienist is trained to clean teeth. An assistant is trained to aid the dr in his/her treatment of the patient.

Significant: Hygeinists are trained to clean teeth, ortho assistants are trained to aid in the application and treatment of orthodontic braces. The first would work for a dentist, the later would work for an orthodontist. Both can realize similar pay scales over time (if you are considering a career direction).
