Yes, but...: There are eeg changes associated with obstructive sleep apnea, but to completely diagnose osa and know what is needed to treat it, you need to be monitoring oxygen levels while sleeping.

Need sleep study : An sleep study to demonstate obstructive sleep apnea, not only monitor sleep itself ( through EEG channel), but also need to monitor your breathing ( through oxygen saturation , respiratory flow, respiratory effort) to be sufficient diagnosis sleep apnea. Currently there're 2 ways of diagnosing sleep apnea: HST ( home sleep testing) and polysomogragy (in-lab offical sleep study) .
