Renal diet: Patients on dialysis need to watch their fluid, calcium, protein and potassium intake. The patient you are referring to must have a renal dietician at his dialysis center. You should speak to the dietician about your questions and she should be able to answer them and  speak to you about a renal diet and its restrictions.

Nurses being nice: The total fluid removal target is programmed at the beginning of the dialysis run.  

Fluids consumed on dialysis are added to the total weight target.  The removal target is doable from the onset of dialysis.  If you drink 32 oz in the last hour, it is difficult to get this (and the preprogrammed amount) all off in the last hour.

Fruits and diabetes: You can eat any fruit you like but before each fruit new to you check your blood sugar before you eat it and check again before you start eating your next food intake.

That does not mean you should not take and enjoy fruit. It just means that you may have to mildly adjust your diabetes medication.

Not advised: Diabetics need to review the sugar content of different fruit. Be careful with fruit with fewer than 10 grams of sugar content per hectogram eg. watermelon, melon , lemon, grape, (ADA has lists). Limit  fruit with 11-20 grams of sugar like banana, pomegranate, orange, apple pear.  Avoid fruit with 20 grams of sugar liked jujube, raisons. The American Diabetes Association is a good start.

Fruits for diabetic: The best fruits are any that are fresh, frozen or canned without added sugars. No restriction: If you are thyroid deficient, take replacement medication. You may eat any fruit you wish.
For good health - Have a diet rich in fresh vegetables, fruits, whole grains, milk and milk products, nuts, beans, legumes, lentils and small amounts of lean meats. Avoid saturated fats. Drink enough water daily, so that your urine is mostly colorless. Exercise at least 150 minutes/week and increase the intensity of exercise gradually. Do not use tobacco, alcohol, weed or street drugs in any form. 
Practice safe sex, if you have sex.

Don't Really Know: Have spent a bunch of time researching your question and can find no good answer.  It is reported to improve renal function in some patients and there are many testimonials to its benefits.  However, the peer reviewed medical literature is a bit sparse on the subject.  Before doing anything, i would strongly recommend you talk with your kidney doctor.
