my brother was diagnosed with a warthin's tumor and needs surgery to remove it. what should we be concerned with in regards to this procedure?

Have surgery, go on.: It's also called: papillary cystadenoma lymphomatosum, and is 8x > in smokers, occurs in men and women and in 5% - 14% or cases, warthin's tumor is bilateral. Warthin's tumor is highly unlikely to become malignant. This is not to be confused with wharton's duct, which is the name for the submandibular duct.

Parotid mass: You look too young for Warthin's tumor. Mass can be biopsied with fine needle, Can use ultrasound for guidance. See another ENT. Consider MRI of the gland.

Get seen: If i were a betting person, i'd consider an epidermoid inclusion cyst (maybe a pair if "left and right") that's been partially ruptured. Best get that thing seen though.

ENT is right: Warthin tumors are benign and if there are no symptoms do not be in a hurry to have surgery.
For good health - Have a diet rich in fresh vegetables, fruits, whole grains, milk and milk products, nuts, beans, legumes, lentils and small amounts of lean meats. Avoid saturated fats. Drink enough water daily, so that your urine is mostly colorless. Exercise at least 150 minutes/week and increase the intensity of exercise gradually. Do not use tobacco, alcohol, weed or street drugs in any form. 
Practice safe sex, if you have sex.

24 m. sub cm nodes only on l (occipital, supraclav, epitrochlear) for months. ct of h&n showed slight enlarge bilat jugulodigastric nodes,  l>r. fnac and flow on l jd node came back as possible benign warthins tumor. how is benign if outside parotid?

Cancer unlikely: Since this tumor has been there for many years and is still too small to biopsy, it can be left alone. it is not likely to be a cancer unless it is growing in size.

Can't be done: If by "grow high" you mean "get taller", it doesn't work that way, most likely not at your age when bones are fused. If you mean "get stoned", then any illicit use of drugs can do this, although i wouldn't recommend it.
