Gastritis: Sounds like some type of gastritis or reflux. I would consider and antacid, pepto bismol or H2 blocker for a short course for relief.

Food intake: University can be fun but you must change your eating habits. One meal a day is inadequate and you should really try breakfast, lunch, and dinner. Spread out your food intake over these times.
If you are indeed losing weight you should slightly increase the size of your meals.
Improvement won't happen overnight but you will come to appreciate the benefit.

GERD possible: Certainly possible to be due to GERD. Try a course of anti-acid medication and see if it helps. If it is severe and slash for unrelenting, see your primary care doctor to discuss further. Hope this helps!

Question unclear: If you are asking why the burning, you may have irritated the anus by wiping when you had diarrhea, may have developed secondary yeast infection, may have aggravated hemorrhoids, and so on.  You need to be seen and be examined to determine what this is and get it treated. You could try an otc hemorrhoid cream and see if it works.  Good luck.

See Doctor: This could be any number of issues including irritable bowel but could also represent mesenteric ischemia.  Would suggest immediate consultation with a gastroenterologist to evaluate your mother to discern what is going on.  This needs immediate attention especially if she is over 50.

Digestive issue: Is the simple answer. Could be you ate something that literally disagrees with you. Could be lack of digestive enzymes or overeating. Could be irritable bowel. 
If it bothers you, vbe evaluated. If not try taking digestive enzymes with meals ad see if that helps. Consider a trial of no dairy and no wheat. You may find that helps.

"Heartburn": Gastroesophageal reflux disease is a common cause of such symptoms ("heartburn"). If it's in the right side of your abdomen - it can also be due to gallbladder stones/other problems.

What happens when you don't eat such foods? If improved, then avoid them.

If you are having difficulty swallowing, black tarry stools, weight loss, or noticed any bleeding from your rectum- see a doctor immediately

it depends on why you have stomach pain. If it is peptic acid disease, it may help but that would require diagnosis and specific therapy.
