why is my tongue not smooth?

Not supposed to be: The surface is covered with little bumps (filliform papillae) which contain taste buds. In the back are bigger bulge-y bumps (vallate papillae). A smooth tongue (bald) is an abnormal finding, a sign of (often) nutritional deficiency, e.g. Iron, folate, (folic acid) b vitamin including  b12, riboflavin (b2), b6, or niacin. Other causes as well.

Options: Which part of the tongue burns (i.e. Whole tongue, tip, back, only one side?)  this could be related to cervical issues, metals in your crowns if they are new, tooth paste, chewing gum, etc... Many options, but start with anatomy, that is which nerve is involved.  You may need a qualified physician to help you rule out causes.

Scalloped tongue: Are referring to scalloping on the sides of your tongue?  This can occur because of  bruxism, or grinding your teeth during the night.  It may be an indication of sleep apnea.  Best to get your tongue evaluated.

Cutting : Tongue splitting is a procedure done to people who want a snake-like tongue.  Not a recommended procedure as loss of feeling, severe bleeding, infection, and other problems may result.

Thrush : Caused of white tongue vary by underlying health status. If you recently finished an antibiotic treatment, oral thrush maybe the cause. Others are leukoplakia, geographic tongue, oral lichen planus, certain medications, chronic inflammation from dry mouth, dehydration, and others. I recommend you have your tongue checked out by your primary care provider to see if you need treatment.

Thickening tongue: Is it sudden? Are you drooling ,having difficulty speaking or swallowing? Could be allergic reaction to food or other material, take a benedryl ( if not allergic to it) and seek medical attention immediately  in ER.

Long term thickening can be due to acromegaly, thyroid disease, amylodosis. See a doctor
