Oh my ! Two issues : At once! miserable. Get your dentist to treat the ulcer with medication/prescribe topical meds. Lasers work well too. Your TMJ issue needs proper diagnosis. A good start is to locate a dentist that treats the issue ;get into a passive bite guard/splint that is balanced to your bite ; allows for proper function. Symptoms of "tmj" many times are more about muscle issues ; proper diagnosis is essenti.

Habit: It's most likely just a bad habit that requires determination and will power to stop. However, without actually examining you, we can't help much more. See a dentist for a personal evaluation and if you feel stress, anxiety or other emotional issue is a contributing factor, speak to your own physician for a referral to someone who can help you in this regard.

Difficult problem: The exact reason why people chew their tongue in sleep is not known.  It is likely that the cause maybe anxiety or other stress reaction, medication side effect, response to tongue injury. If you are doing this habitually then using a gum gaurd may help.  These are used by athletes to protect the mouth.  Hypnosis ( by a licensed provider) and acupuncture may help.

Yes, and No: I do not know of any medical or physiological reason that would cause  you to want to chew your tongue when smelling carpet. However if it is only when you smell new carpet, there may have been a learned behavior from your childhood. New carpet in the 1970's had fairly high levels of formaldehyde present and degassing. If you had been exposed to a high enough level as a child it could caused this.

: Absolutely you should be concerned, cancer detected and treated in the first 6 months has an over 80% survival rate, oral cancer detected after 6 months has an 80% mortality rate.  These are significant statistical differences. Please go and get checked immediately, and try to stop the habit.

Causes of tongue that looks patchy include: lichen planus (responds to steroids), white sponge nevus (familial, benign, permanent), smoker's leukoplakia (2% risk of cancer, needs biopsy), hairy leukoplakia (due to epsteinbarr virus), warts (due to papillomavirus), "thrush" (rx antifungals).
