IBS And Stool: It very well may be how inflamed the intestines are at the time the food is ingested and how long it takes to circumnavigate the GI system.  Swollen intestines are probably not absorbing the calories as well, fluids may not be absorbed fully and the texture of the stool then appears different than other's formed stool can be.

Yes indeed ..: It turns out that the passage of mucus while stooling is a common feature often seen with irritable bowel syndrome.  Even with healthy bowel movements we pass small amounts of mucus, but it's so small that it's not readily visible with the naked eye.  You should make sure that something more isn't going on, as visible mucus passage can be a feature seen in more concerning processes like IBD.

Bile!  : Green in stool tends to be bile, the product of the gallbladder. It's secreted all the time but mostly reabsorbed in the colon. You're not reabsorbing right now. Unclear why, but I would not be surprised if your IBS is playing a role. Talk to your doctor.
