i've heard that iceberg lettuce has limited nutritional value. is that true?

No: Iceberg lettuce pales next to dark leafy greens.  But it's not so bad.  There's vitamin c, potassium and iron, folate, (folic acid) vit k too.  It's got very few calories and no fat.  And it makes a wonderful edible cup, bowl or plate for all kinds of tasty dishes.

Possible: The most common food allergens are egg, milk, wheat, soy, peanuts, tree nuts, shellfish and fish. Other foods can cause allergic reaction but are much less likely.

Undigestable Fiber: Lettuce, and other green leafy vegetables are first mechanically digested via chewing, which breaks open the plant cell walls.  The cellular contents are then absorbed by the intestinal linings.

However, the cell walls themselves are not digestible (although the bacteria in the intestines can break them down somewhat).  This is what constitutes fiber in the diet and forms the bulk in the stool.

They can all have it: Any produce grown or processed near livestock or meat products may be contaminated by e. Coli. In general, you should wash your produce carefully and consider steaming, boiling or sauteing your vegetables, if you are worried about getting sick. Make sure you cut vegetables first before cutting meat or use separate cutting boards or wash board in hot, soapy water after cutting meat.

Food poisoning...: Usually food poisoning symptoms develop within the first couple of hours after ingestion. Based on what you are describing this should not affect you. If it was contaminated you should have symptoms by now. If that was the case plenty of fluids and rest most of the time helps. In cases where the people gets very sick then they should be seen.If no symptoms then there is nothing to worry about.
