A allergist can also do skin tests for various food allergies. Celiac disease (gluten allergy) can be tested for with special blood tests (the genetic markers can be found). Gastrointestinal doctors can do a small intestine biopsy, if needed, to help diagnose celiac disease.

Food allergy: blood testing is NOT very accurate. I rarely recommend except with young children being exposed to certain foods for the first time - Older Adults just do not produce enough Auto-Antibodies - IgE, IgA to be reliably measured in a blood test

Most likely, no!: To make a diagnosis of a food allergy you need a history of a reaction like what you describe and the test confirms the diagnosis. Allergy testing positive without a previous reaction has a high false positivity so that is why you tolerate wheat; you do not have clinical allergy. Fish allergies tends to stay specially if you get as adult. I would suggest to avoid, epipen and med alert bracelet

Certain blood tests showing immune reactions to certain intestinal enzymes, e.g. Tissue transglutaminase (ttg), are positive in celiac disease. Consult a gastroenterologist.
