Inflammation: This appears to be an inflammatory reaction to either overuse or an actual arthritic inflammation. Spreading to wrists and arms is unusual and concerning. Is there any association with occupational activities or household duties? Anti-inflammatory medications like ibuprofen as well as warm soaks may relieve your symptoms, but I recommend that you see your MD or a rheumatologist for evaluation.

See your doctor: With these kinds of symptoms and their persistent nature, it's best if you see your doctor.  He/she will listen to you, do an examination, possibly run some tests and let you know what's going on.

Nsaids: For pain / inflammation in the wrists my first choice of medication if you have no kidney problems and no history of an severe gastritis/GERD is Ibuprofen. You can also at night place your wrists in a wrist splint then take them off during the day, see if this helps as well. Follow up closely with your primary doc in the mean time. Take Ibuprofen with food.

Needs exam: Your husband needs an exam. The way it is described he does have signs of an early infection.

Hand swelling: Hand swelling not due to injury or an insect bite and  with associated itching suggests angioedema which is an allergic reaction. However this type of swelling generally subsides after 24 hours or so. For this reason I  feel an insect bite is more likely in your case. If the hand swelling persists, becomes painful or develops redness, have a physician examine you for diagnosis and treatment.

Could be infection: It is difficult to tell exactly what you have due to limited info, but trauma, tendinitis, phlebitis (inflammation in vein) can cause such symptoms. Infection (cellulitis) is more of a concern here. If you recently had iv/blood draw, bug bite, scratched by cat/dog/rose thorn etc...And now have swollen hand, please consult doc for eval. Sorry i can't tell for sure. Consult doc. Good luck.

Skin lesions: It could be a fungal infection. I would try OTC  lotromin in combination with Hydrocortisone ,half and half twice aday

Allergy?: Sounds possibly to be an allergic reaction, although exactly to what may be difficult to know.  It could be the vegetables themselves, to a chemical that may have been on them like an insecticide, a reaction to some material in the tool you were using, possibly to the handle.  If not severe, you can consider taking an antihistamine, otherwise you should see your doctor for evaluation.
