Start with testing: Simple blood tests can confirm or exclude gluten sensitivity. If the findings are negative, you can stop there and explore other possibilities.If positive, there is much variability in the problem and further tests may be needed to help management.Since other important disorders can be found in gluten sensitive patients, self diagnosis by avoiding gluten should not be considered safe.

SORBITOL SIDE EFFECT: Yes it may be, sorbitol is notorious for causing frequent bowel moments and IBS like symptoms. If symptoms resolve after stopping that is a good thing. You should still followup with your doctor and get baseline colonoscopy. If you have symptoms above your navel an endoscopy may be warranted, especially if symptoms persist off sorbitol.

Gastroenteritis: Eating undercooked chicken may result in gastroenteritis, most commonly due to Salmonella and/or Campylobacter. Symptoms consist of diarrhea, abdominal cramps, fever, nausea and/or vomiting among the most common. Incubation is from hours to couple of days.

Lifelong: With lifelong digestive problems, I always suspect intolerance of substances like gluten or lactose. Irritable bowel syndrome is also a possibility. I assume that you have been evaluated by a gastroenterologist for true gluten sensitivity, but despite negative testing some patients like you improve on a gluten free diet. Other things to try is avoiding lactose or following a FODMOP avoidance diet

Depends : Indigestion for example is reduced by avoiding caffeine, acidic foods like citrus, tomato sauce, carbonated drinks and alcohol/tobacco.  Sitting up for 2 hours after eating can help.  Gallbladder disease is lessened sometimes by avoiding fatty foods.  Eating more smaller meals than fewer big meals can help some disorders.  The lactose intolerant avoid milk.  Depends on your problem.
