Without : Without examining you it is difficult to come to a conclusion.  You history of fever and throat pain points to an infection, possibly viral.  These typically take a week to 10 days to run their course. Persistent symptoms should be evaluated first by your personal physician then, if no cause is found, by your dentist.

the back of my mouth but not exactly my throat hurts. its more like a pain rather than the typical sore throat. it hurts when i move my tongue, swallow, and drink water. any ideas what i should do?

Have it seen: Hard to say, if the pain persists for over a week, it wold be worth having PCP, or your dentist evaluate it

Cold: Mucous causes the swollen throat and uvula. Tongue irritation can be due to a sore or due to teeth/chewing.  This can happen when you are ill. Please get  checked of worsens.

See a dentist: See a dentist and request a biopsy to evaluate the the white spot (leukoplakia)  on the tongue. Usually some toxin, pathogen, allergen is the cause of the sore throat, see an ENT.

Canker sore: It's possible you may have a viral infection which can cause both the sore and a sore throat. Or, they may not be related.
The canker sore should heal in 7-10 days. If the sore throat lingers for more than 3 days, see your medical doctor.

the surface at the back of my tongue is hard. is this an anxiety issue? muscle issue?

Hard Tongue: Anything on the tongue that is hard should really be evaluated.  Best to be done by an ENT specialist who can perform the appropriate tests or even do a biopsy, if one is needed.
