Diarrhea: sorry to hear you're having problems. If your diarrhea has persisted now for a week and does not appear to be getting better, it is reasonable to see your doctor for it. In the meantime, be sure to drink plenty of fluids to avoid dehydration. Good luck.

Don't worry: This is because your intestinal tract is still recovering from the diarrhea.  If you can see foods in your stool then that is an indication that the food is not being digested well.  To speed your recovery try drinking lots of clear liquids (which includes jello and chicken soup, but no caffeine),
and eating a BRAT diet for 2-3 days. BRAT diet includes Bananas, Rice, Applesauce, &amp; Toast.

What test done: You need to discuss with your. Physician cultures, ova parasites and H Pylori tests are in order. Your physician may want you to see a gastroenterologist

Probably normal: Mucous is a normal constituent of stool. If you have no other symptoms, it's probably normal.

Something you ate: it could be something you ate.sometime fat we eat will looks like that in the stool.it depend how your body digest and absorbed the food 
if keep persisting and concern you send the stool for analysis.

Wait for the next...: White discoloration of the stool may be a sign of liver/biliary disorders. I would wait for the next bowel movement and see if stool is white again. If it is, check with your doctor for blood work.

: Small amounts of mucus in the stool is not unusual as it is a lubricant secreted by the large intestinal cells to keep things moving. However if it increases in volume or have blood and other substance also present, it might be a sign that requires attention first of the PCP and then the Gastroenterologist. Please check it out if it persists.

: Symptoms from COVID are highly variable, though what you are describing is not very suggestive. It can't hurt to test if you wish.
