No: Erythromycin is an antibiotic which can help with infection but will have no effect on vessels that are bleeding.

Goes away on own: Usually resolves on own. If this is reoccuring you should see a doctor to get it checked out.

Yes: If this is in fact influenza you will get better over a period of two weeks or so.  Unless you get a secondary bacterial infection you will not benefit from an antibiotic.  As long as you are not getting worse after the miserable first five days or so you will continue to gradually improve. If this is influenza it helps to understand why flu shots are recommended.

I believe: ....In my humble opinion there is no correlation between vein in the nose, bleeding and being a vegetarian.
Check your BP and see an ENT specialist who will cauterize the bleeding points. In case you bleed plug up the nostrils with gauze or cotton and apply pressure from outside with two fingers.

Headache: You may have neuralgia involving the superficial nerve over the right eye but this wouldn't cause a ruptured vessel or subconjunctival hemorrhage. I recommend that you have an examination by your physician if headache persists and he/she will determine whether it's advisable to see an ophthalmologist for the subconjunctival hemorrhage which usually resolves without any specific treatment.

YES, But: I assume you have a red eye from a broken blood vessel in the sclera ( while part) of your eye.  The vessel and blood will not come in contact with a contact lens, but it would be best to give your eye a few days red.  Wearing a contact lens may slow the healing process.  You may want to be evaluated by an eye doc to make sure there is nothing else wrong withyour eye.

Yes.: If what you mean by a popped vein is a bulging varicose vein then itching can be due to the varicose vein.  Other related symptoms could be aching, cramping, burning, heaviness and pressure.  You should see a vein specialist for  a full venous evaluation with a venous reflux examination.
