Thyroid and the live: The thyroid is unlikely source of liver inflammation.  Consider fatty liver and autoimmune liver disease -- see a physician.

Need to examine: It is not feasible to provide a meaningful opinion without taking additional history, physical examination and may be some tests. It would be prudent to see your doctor and discuss if you may be depressed. Counter-intuitive as it may seem, exercise may help. Liver enzymes: Why did you have blood tests done. He is yellow? Is his liver enlarged? Was he exposed to hepatitis? A lot of unanswered questions, 
more information is needed.

Yes: Most doctors will want blood tests indicating your current blood counts (red and white blood cells, platelets) and making sure you are not at risk for bleeding excessively during the test. The may want liver function tests as well, or even kidney function tests.

If usually healthy..: A usually healthy person who becomes ill but has normal liver enzyme test results can be fairly confident that his ill symptoms are not due to liver damage. That is because liver damage causes liver enzymes to leak out of liver cells and end up in the blood, where the lab can detect elevated levels of such enzymes.

why can kidney and liver function be tested by simple blood tests, but other organs cannot? why can't all organs be tested this way? just wondering

Basic biology: The kidney's best-known function is to remove waste from the blood, so that's easy to understand. Liver function tests is actually a misnomer -- these measure stuff released when the liver is injured. Similar tests exist for heart muscle, and blood gases are a marker for lung function, but your history and physical exam are more helpful as screens.
