However, in those with hypersecretory states like zollinger-ellison syndrome, gastrin is continually produced in high concentration resulting in excess acid, diarrhea, ulcers.

Yes, mostly: The purpose of a PPI is to stop the production of hydrochloric acid.. Achlorhydia is the abscence of that acid. So the answer is yes. Gastrin stimulates acid production, so when the PPI blocks it's production, the body reacts by producing more gastrin trying to overcome the effect of the PPI.  Both these can resolve after PPI is stopped or dose decreased.
Gastroparesis is not related to PPI.

Whoa: Gastrin itself will not do this, but let’s look at the big picture. High gastrin can be due to a range of things from taking antacids to having a rare pancreatic cancer. Lung nodules can be anything from the banal lesions of histoplasmosis that are almost the norm in much of the US to metastatic cancer. Telling the difference is the radiologist’s and clinicians job. I hope it’s nothing.

No: I am going to assume you've been found to have an elevated gastrin level and this is causing you to make extra stomach acid. The Prilosec will help protect your stomach from the gastrin. This isn't a forum to evaluate a complete history, but if you have a gastrinoma, there are often additional ways to manage it though Prilosec is a good start. Stay proactive and good luck.
