If i stop taking my prilosec will my gastrin levels return to normal permanently ?

No: I am going to assume you've been found to have an elevated gastrin level and this is causing you to make extra stomach acid. The Prilosec will help protect your stomach from the gastrin. This isn't a forum to evaluate a complete history, but if you have a gastrinoma, there are often additional ways to manage it though Prilosec is a good start. Stay proactive and good luck.
