Faster than that: Food-borne illness hits hard and fast, anywhere from 30 minutes after a contaminated meal with certain bacterial toxins from killed bacteria to a day or two if there are live pathologic bacteria present in the food.   longer periods without symptoms would be unusual.

Most people who get sick likely have symptoms on Day 2 or 3.

However, other viruses can take longer, so no guarantees.

No real guarantees: Contagiousness varies among different "stomach viruses" and among different people, so is not easily predictable. However, one can feel safe if it is 6 days after exposure. Most people would have shown symptoms by days 2-4. If unlucky, really unlucky, one can still come down with the illness. The only things guaranteed in life are "death and taxes."

: A negative result on a 4th gen test, 9 weeks after exposure, rules out HIV.
HIV is only one of the STDs. A condom may not protect against HPV, Herpes, LGV, syphilis, pubic lice etc. It would be prudent to see your doctor for an evaluation.

Bed bugs?: Since you were vacationing and they were not on exposed skin it is possible that these are bed bug marks.  Without seeing the bumps it is difficult to say what they may be.

Pale skin: If you have a sun sensitivity, you would have blisters or burns.  If you have a sun allergy , itching should be present .  Does this happen without or with sunscreen?
