So, an individual who is not supposed to be drinking may have zero BAC, but an EtG of several hundred to several thousand if they drank the day before.

Not that I know of: I am not aware of any versions of kimchi that would contain active amounts of ethanol.  Ethyl glucuronide is highly specific for ethanol, and unless your version is being made with cooking wine or some other form of beverage alcohol, I would not expect EtG to be positive.
