It won't.: Olive oil contains monounsaturated fats, which help raise your HDL cholesterol - the "healthy" cholesterol - in your blood. High HDL levels are associated with a lower incidence of heart attacks and strokes. But the idea that olive oil can somehow "clean out your arteries" is ludicrous, no matter what dr. Oz and other pseudo-experts say.

Olives are picked early in the season tend to make green coloured oil as they contain higher levels of chlorophyll. Olives harvested late in the season will typically produce more golden coloured oils due to a higher level of natural occurring levels of carotene like substances.
