Yes risk: There will always be a risk. This risk will be less if you do not have an outbreak during sex and if you use condoms. The condoms is the most important part but this is not 100% protective.

Low risk: By being on Valtrex (valacyclovir) and using condoms, you're greatly lowering the risk. You can't do much more than that short of abstinence. Keep in mind that he could already have been infected, even if he has no outbreaks. The only way to find out would be with an hsv-2 antibody test. But since you're already taking valtrex, (valacyclovir) i'm not sure the information would help.
