7-10 days: You will be able to eat soft foods within a day or two. The sockets usually are closed in a week or so.

Healing time: It usually takes 4-8 weeks for the extraction site (hole) to actually heal and close up depending on whether some surgery was performed or not. Generally speaking though, after a week or two you can resume your normal eating habits if all of the post-extraction care instructions are followed.
