Ask surgeon: If you are the individual with the heart surgery, I am concerned of a more complex cardiac history. A 33 year old having undergone significant cardiac surgery should directly discuss all these matters with both surgeon and cardiologist. Diet after any surgery is discussed with specific surgeon. Coffee is often started with regular diet.

As tolerated: As soon as you can tolerate liquids. I would stick to decaf, unless your doctor allows otherwise.

Now: There is really no contraindication to drinking coffee in moderation after heart surgery if every thing is going well.
