Why do i feel itchy sensation in my pharynx and the back of my tongue?

Could be several : Itchy sensation is a sign of infection. It could be strep throat, candidiasis, or a viral infection. The questions i would want to know is how long have you had the symptom? Are there any other symptoms? You should seek consultation with a dentist or an ear, nose, and throat doctor to get it evaluated and identified.
