Which carbs?: Changing to a gluten-free diet takes adjusting, but depending on your clinical situation may be good for you. You also have hashimoto's thyroiditis, which often coincides with gluten sensitivity. Veggies, fruits, complex carbs, etc are "carbs" but are allowable in gluten free if not wheat gluten derived. Statins can cause muscle issues -- please discuss with your doctor. Eat lean protein too!

What carbs?: Depends on what carbs you are eating, if you don't have enough protein and fiber in your diet, and eating excess carbs, you will feel tired.
