No: People with celiac suffer from a wide range of severity of symptoms. Yes, some are malnurished. Others have mild intermittent abdominal pain, some have fatigue and yet others have rashes as their main problem.

No: There are variable degrees of involvement even without avoidance of gluten. Of course, once celiac disease is recognized avoidance of all gluten-containing foods resolves in resolution of intestinal injury, malabsorption and malnutrition.
