Absorption: In this condition, the gluten protein is toxic to the hair-follicle -like structure in the small intestine causing impairment in nutrient absorption. Most people would have abdominal discomfort after eating foods with gluten. This in turns leads to neurologic symptoms, weight loss, anemia etc. This is considered an autoimmune disease and not an allergic disease.
