Non-starchy veggies: Ask her doctor for referral to diabetic educator and/or nutritionist. She should have a glucometer to measure her body's response to different foods which will tell her exactly how high her sugars get after eating specific amount of specific food. Try to avoid starchy vegetables like regular potatoes. Sweet potatoes & yams should be fine. Brightly or darkly colored veggies are great. Fruit w/skin.
