Carrot Consumption: Habitual carrot consumption is the cause of yellowing skin. The same fat-soluble pigments (carotenoids) that account for the deep orange color of carrots are responsible. In general, carotenoids are beneficial to health and can protect the skin from sun damage. This color change is not at all dangerous and will fade quickly when one reduces consumption of carrots.

Impossible: It is impossible to get Vit A toxicity from too many carrots because carrots have NO Vit A, only beta carotene that our bodies convert to A as needed. Too many carrots can make one's skin turn yellow-orange.
