Simple storage: Our liver constantly makes bile which breaks down the fats we eat. Extra bile is stored in the gall bladder which dehydrates it to make room for more. This causes sludge and stones which can irritate the gb. Eating fats increases bile production and makes the gb "squeeze" out contents. Any slowdown or blockage causes inflammation which can cause worse problems. This will progress until removal.
