White Teas: Tea is derived from a tree called camellia sinensis. The leaves contain antioxidant polyphenols which have an anti-carcinogenic effect. The lighter the tea, the less it has been processed. White and green teas are especially helpful. White tea is actually a green tea with minimal processing.

White tea: Agree with dr. Fowler about where "white" tea comes from. It's not fermented as the more common black teas are; green tea is partially fermented also. All are full of flavonoids (antioxidant compounds), but white tea has the highest concentration.
