Wisdom teeth: Around the ages of 16-21ish are usually not fully developed - where they haven't reached their full root length. This has "anatomic advantages" that can reduce potential compliations. Since many times they don't have room to emerge, the longer their roots are allowed to grow to full maturity length, the closer to an important sensory nerve (bottom ones) and to the sinus (upper ones) they can get.

Protoplasm: There's nothing like young protoplasm. Teens heal quicker than adults. In addition to it being easier to remove a partially developed tooth than the larger fully developed tooth, teens tolerate procedure better.
