Breathing tube: Is used to seal and protect your airway and lungs from stomach acid (which is why you have surgery on empty stomach!) as well as to deliver oxygen and remove co2. The endotracheal tube or laryngeal mask also allow monitoring of gas levels and core temp. Anesthetist or anesthesiologist (or more commonly for longer cases ventilator machine) actually deliver the puff of inspired air; tube is the path.
