As the title says, could an immunized person still carry and therefore infect others with hepatitis a/b?

No: If you have been immunized (vaccinated) for hepatitis a and b, and you have developed antibodies against hepatitis a and b (which can be checked by another blood test), then you are immune to the virus and not contagious, so you can't infect others. Immunized people don't 'carry' virus.
