No: People don't eat gluten, they ear foods that contain gluten. These are grains, which contain some poorly digestible carbohydrates. Bacteria in the gut ferment these, can cause gas, bloat, pain, diarrhea- similar to symptoms of celiac sprue gluten bowel disease. The latter is immune related, the former is digestive.
