I understand one of the symptoms of a stroke is vision problems, what happens to it?

Visual: Field defect. If you think of the area you see out of your eye as a circle on a clock, strokes can cause reduced vision in certain parts of the "clock area". Hopefully, the graphic gives you an idea.
