Nondiabetics will have transient spikes in blood sugar for a couple of hours after ingesting carbohydrates, especially concentrated ones like candies,pastry,syrups,sugared drinks,etc. They do release enough insulin & properly utilize that insulin, to prevent persisting hyperglycemia as opposed to type 2 diabetics who have insulin resistance. I don't think the factors you mention play much of role
