In general itis because they compete for the same enzyme receptors that breakdown another drug. Thus the effect of the other drug is greater and longer. It is simple competition for the same machine that chops certain meds up. Imagine having to get thru a hole of a certain size to get into cell to be degraded. The more of 2 things the same size Say A&B the the more A around the more gets thru.
