Being thirster than usual, then feeling dry mouth and throat makes me wonder if you have new onset diabetes. Not being able to swallow saliva is unusal when food and drinks are no problem. However, it may be that your mouth is so dry it feels like there is not enough saliva to swallow. You need to see a physician and be tested for diabetes and examined well and determine other tests too.

Sounds like an unusual scenario, which would require further discussion and maybe investigations. Initially, I would be concerned about the possibility of diabetes also, given the dry mouth, and further testing may be necessary. See your primary doctor. Perhaps a neurology visit may be necessary.
