It's your epiglottis, normal throat anatomy. The epiglottis is the flap that closes the airway when you swallow, so that swallowing doesn't send fluids into your trachea and bronchial tubes. When you cough because food or drink "goes down the wrong way", it's because the epiglottis didn't close all the way as you were swallowing.
