What causes chronic thirst with normal electrolytes, diabetes, addinsons and thyroid issues ruled out? i feel thirsty and dehydrated 24/7 and am often told by phlebotomists i need to drink more when i drink enough? i have ibd (uc) if that's relevant?

most likely losing fluid from UC if by that you mean ulcerative colitis. Never use abbreviations in medical communications They can be deadly.
